Chocolate Chip Reese’s Pieces Cookie Cake

Looking for a treat that is simple? Pretty? Festive? Fun? Scrumptious? Do you love chocolate chips and Reese’s Pieces? Then look no further, as this cookie cake is the one for you! It really is a breeze to make, and is perfect for any occasion. The orange, yellow, and browns create a lovely fall look, and with Thanksgiving just around the corner, you might consider baking this cookie in a pie pan and adding it to your feast!

Step one is to bake your cookie. Mix up the ingredients, press into the pan of your choice, and sprinkle more chocolate chips and Reese’s pieces on top! Then bake to perfection.

Step two is to decorate! Let your cookie cool completely (you can always pop it into the fridge or freezer for a few minutes to help it cool faster), make the chocolate frosting, and pipe on your border.

Then slice and serve!

Chocolate Chip Reese’s Pieces Cookie Cake

For the Cookie:

  • 10 tablespoons butter, softened
  • 2/3 cup brown sugar
  • 1/3 cup sugar
  • 1 egg + 1 egg yolk
  • 1 teaspoon vanilla
  • 1 2/3 cups flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 cup chocolate chips
  • 1 cup Reese’s Pieces

For the Frosting:

  • 1/2 cup butter, softened
  • 4 tablespoons cocoa powder
  • 2 1/2 cups powdered sugar
  • 1 teaspoon vanilla
  • 2-3 tablespoons milk

Instructions

For the cookie:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Cream butter and sugars for about 2 minutes.
  3. Mix in egg, egg yolk, and vanilla.
  4. Add dry ingredients to mixture and mix until just combined.
  5. Reserve 2 tablespoons of chocolate chips and 2 tablespoons of Reese’s Pieces for later. Stir the remaining chocolate chips and Reese’s Pieces into the dough.
  6. Press dough into a greased 9″ pan (pie plate, cake pan, springform pan, or deep dish pizza pan will work).
  7. Sprinkle the reserved chocolate chips and Reese’s pieces on top of the cookie.
  8. Bake for 22-25 minutes, and then let cookie cool completely before loosening the edges.

For the Frosting:

  1. Beat all ingredients in a mixing bowl until smooth. Add milk slowly until desired consistency is reached.
  2. Pipe frosting around the border of the cooled cookie.
  3. Cut into slices and serve!
