Stars and stripes forever! This Independence Day, I put together a simple and fun cupcake that is super festive and contains a sweet surprise! These beautiful cupcakes are inspired by dazzling fireworks and shimmering stars that light up the night sky every July 4th.

To start, bake up a batch of your favorite chocolate or vanilla cupcakes. Make sure to bake them in fun, holiday wrappers!

While the cupcakes cool, prepare the buttercream. Divide it into 3 equal parts, and color them red and blue and leave the last section white.

Next, put each portion of buttercream into its own piping bag, and pipe each color in a thick line, side-by-side on a piece of cling wrap. Roll up the buttercream in the cling wrap, cut the tip and slide the roll into another piping bag (prepared with a star tip). 

Don’t start piping yet! If you wish to add the strawberry surprise to each cupcake, now is the time to do so. Using a medium sized piping tip, press it into the middle of each cupcake and remove it along with the cake from the center. Fill the indention with seedless strawberry jam and return the cake core to the top.

Ok, once you have those cupcakes cooled and filled, and the buttercream is prepared and ready to go, it’s time for the fun part! Start by piping a swirl of buttercream onto a cupcake, cover it in a mix of festive holiday sprinkles, and top with a cute silver star pick! Repeat until all cupcakes are decorated and dazzling.

  • Bake vanilla cupcakes in fun cupcake papers and let cool completely on wire racks.
  • Prepare buttercream and divide into 3 equal portions. Use gel food color to color one portion red and one portion blue. Leave the third portion white.
  • Put each portion of buttercream into its own piping bag, and pipe each color in a thick line, side-by-side on a piece of cling wrap. Roll up the buttercream in the cling wrap, cut the tip and slide the roll into another piping bag (prepared with a star tip). 
  • Using a medium sized piping tip, press it into the middle of each cupcake and remove it along with the cake from the center. Fill the indention with seedless strawberry jam and return the cake core to the top. Repeat on all cupcakes.
  • Pipe a swirl of buttercream onto a cupcake, top with sprinkles, and insert a silver star pick into the center. Repeat on all cupcakes.
